Two ingredient recipe , Nonstick pan needed
1 cup red lentils
2 cups pure water (non chlorinated)
Soak lentils for at least 3 hours, overnight works as well. Blend lentils and water in a blend until consistency is a smooth pancake-like batter.
Heat a nonstick pan over medium heat. Pour approximately 1/2 cup of batter into pan. Swirl pan to fill the bottom of the pan. Cook until bubbles pop, turn and cook other side. Both sides should have golden brown patches. Repeat with remaining batter. Enjoy!
This recipe makes a flexible bread that freezes well. Experiment with adding herbs, salt, etc.
