Vanilla Pecan Cookies


1/2 C. Maple syrup
1/3 to 1/2 C. Coconut oil
1 1/2 teaspoon vanilla
1/2 teaspoon salt
1/2 C. Almond flour
3/4 C. Whole wheat pastry flour (or all purpose white flour)
1 Cup chopped pecans (walnuts are good too)
Form a log with the dough, wrap in plastic wrap, 
refrigerate. Slice about 1/4” thick, bake on parchment 
paper for 10 minutes, until edges are slightly brown. 
Remove to cooling rack. 


Oatmeal Cookies


1/2 C. Maple syrup
1 teas. Vanilla
1/3 to 1/2 C. Coconut oil
3/4 teas. Salt
1 teas. Cinnamon 
1 C. raisins
1/2 C. Almond flour
1/2 C. Whole wheat pastry flour (or all purpose white flour) 
1 C. Rolled oats
Drop by teaspoon on parchment lined cookie sheet and 
press flat, bake at 350 for approximately 10 min. and 
edges are brown.
