“Cheese” sauce

2 Tbsp. shallots, peeled, rough chop

1 cup red or yellow potatoes, chopped - can be peeled for consistent sauce color

1/4 cup carrots (about 3 medium size), rough chop

1/3 cup onion, peeled, rough chop

1 cup water 

1/4 cup pine nuts

1/3 cup palm oil

2 tsp. sea salt

1 to 11/2 Tbsp. lemon juice, fresh squeezed 

1/8 tsp cayenne pepper

1/4 tsp smoked paprika 

 

Steam potatoes and carrots, save the water. (May cook on stove) 

Place lemon juice, water, spices, palm oil, onion, shallot, pine nuts, carrot, and potatoes in blender. Blend until completely smooth. 
 

Uses: for macaroni and cheese, nachos, enchiladas, lasagna, and more
